Nutty Pumpkin Spice Cookies
Finding a balance between eating healthy and all of the delicious holiday desserts you do not want to miss out on can be hard. This time of the year is my favorite because I love all of the fall inspired dishes, whether it's a the main meal, a side dish or a dessert. It is hard to pick and choose which ones are worth every bite. While you are trying to decide which treats you want to splurge on, why not have a treat that you can eat all the time?
These Nutty Pumpkin Spice Cookies have the perfect amount of fall flavor to remind you of all those delicious dishes without all of the added unhealthy ingredients. They are super versatile and can be made in many different ways with lots of ingredients.
I did not add any sweetener to my cookies, but that is simply by choice. You can easily add ingredients such as honey, maple syrup or any sweetener of choice!
So I encourage you to take this recipe and create your own :)
Nutty Pumpkin Spice Cookies
(Makes 10 (1oz) Size Cookies)
Ingredients
1/4 C of any Nut Butter (I used NuttZo Seven Seed & Nut Butter)
1/2 C of Pumpkin Puree
1 Egg
1/4 C of Coconut Flour
2 tsp Vanilla Extract
2 tsp Pumpkin Pie Spice
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 tsp Apple Cider Vinegar
1-3 Tbsp Sweetener of Choice (Optional)
Additional (Optional) Ingredients
Chopped Nuts (Pumpkin Seeds, Walnuts, Pecans, Almonds, etc).
Shredded Coconut
Dried Fruit
Cocoa Nibs
Directions
Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
In a small bowl, mix together the Baking Soda, Baking Powder, Salt and Apple Cider Vinegar. Stir the mixture well and set to the side.
In a bowl, mix the Nut Butter, Pumpkin Puree, Egg, Coconut Flour, Vanilla Extract, Baking Powder/Soda/Salt mix, Sweetener of choice and Pumpkin Pie Spice together.
Spoon cookies (about 1oz of raw batter) onto a cookie sheet.
Cook for 10-15 minutes or until golden brown!
