Are you someone who likes a sweet treat every now and then? Or do you enjoy healthy snacks that are filled with tons of nutritional value? These Almond Joy Cookies are perfect for a sweet craving or a nutritious snack. They are filled with a ton of healthy fat, fiber and protein.

They are crunchy with a delicious toasted nut flavor. The best part is, is that the ingredients could be interchanged and flavored to what you enjoy. Almond Joy's do not necessarily have to be made with Almonds. You could easily add walnuts, pecans, hazelnuts and more. Maybe add a few drops of your favorite extracts to enhance a flavor you love or even some dried fruit!

All in all, these "cookies" are a delicious and healthy way to enjoy a nice snack.

Paleo Almond Joy Cookies

(Servings 11)

Ingredients

  • 3.5 Oz of Unsweetened Coconut

  • 1/4 Cup of Unsweetened Baking Chocolate or Cocoa Nibs

  • 1/4 Cup of Chopped Almonds

  • 3.5 Oz of Coconut Creme

  • 1/4 Cup of Water

Directions

  1. Mix together the Coconut, Chocolate and Almonds.

  2. Pour in the Coconut Creme and Water, mix until the batter becomes dough like.

  3. Spoon batter onto parchment paper and form into a cookie shape with your fingers.

  4. Bake for 12-15 minutes or until crispy at 325 degrees.
