Pumpkin Spice "Egg" Pancakes

I created a recipe that makes enough pancakes just for you! These pancakes are fluffy and full of flavor. You can make them the day of, or make them the night before to allow for a quick, easy and delicious breakfast! They are super versatile when it comes to flavor as well. Instead of adding items like pumpkin puree, you can add different flavors to make the pancakes taste just right!

These pancakes can also be topped and paired with lots of different items: fruit, nut butters, nuts, syrup and anything else you love with your pancakes.

Here is my recipe for Pumpkin Spice Pancakes!!

Pumpkin Spice Pancakes

(Serving Size: 1)

Ingredients

  • 1 Egg

  • 1 Egg White

  • 1 Tbsp of Pumpkin Puree

  • 1/4 C of Unsweetened Almond Milk

  • 2 Tbsp's of Coconut Flour

  • 1/2 Tbsp Psyllium Husk Powder

  • 2-4 Tbsp's of Water (If the batter is too thick, add more water)

  • 1 tsp Vanilla Extract

  • Pumpkin Pie Spice

  • Toppings: Coconut Butter, Almond Butter, Maple Syrup, Honey, Fruit, Nuts and anything else you like on your pancakes!

Directions

  1. Mix all ingredients together and pour batter onto skillet.

  2. Cook pancakes until cooked just perfectly!

  3. Top with your favorite toppings!
